I would like to allow users registered as subscribers to write and publish a certain custom post type 'Events', but I cant't figure out the right settings… Is this possible at all?

An alternative would be to allow new users to register as Contributors and remove access to everything but Events.

Hope somebody can help me with this, Im really stuck here…

First, ensure that your post type is enabled for RS filtering: Roles > Options > Realm tab > "Post Type Usage"

Next, go to Roles > General and assign an "Event Author" role to group [WP Subscriber]
