Your Roles > Catégories Membres form shows that for every category, you have assigned the "Conseil Membre Reader" role to users which the WP Contributor role. This does not enable them to edit the custom post or assign terms. Instead, you need to give them a "Conseil Membre Editor" role in desired categories.

Thank you very much Kevin.
At this moment, I am trying to deepen my knowledge about this fantastic plugin. I spotted a few bugs about custom type and role scoper. I will soon begin a new article on the subject.
