Restrictions:
Roles;
DEFAULTS for new Møde Referater:
'Mødereferat' is a custom post type built with plugins custom-fields-ui and custom posttype ui
The user 'testbestyrelse_1' is a member of the group 'Afdelingsbestyrelse' and has the WP role 'subscriber'
He can edit a couple of already existing 'mødereferat's - he's role to these specific posts is editor (through membership of Afdelingsbestyrelse)
But he can't create new 'Mødereferat's

The "DEFAULTS for new" post role assignment bestows the Editor role to selected users and groups for each new post after it is created.
To give a user the ability to create / publish a new post, they need a General Role or (if the post type uses taxonomies) Taxonomy Role assignment. In your case, group Afdelingsbestyrelse needs a General Role of Møde Referat Editor.

Thanks for responding so quickly!
For the life of me I can't do what you are telling me. I simply don't know how to do it.
In the 'define' groups page for 'Afdelingsbestyrelse' I see no such option, and likewise in the 'Mødereferat' roles page - no such option
?

FYI, if you have any desire for them to edit a subset of the Møde Referater posts, a General Role of Møde Referat Author would be sufficient.

Well the only reason I chose editor was because I wanted them to able to publish and edit by themselves.
If I understand you correctly, setting them to GR of Møde Referat author, would mean they could still publish but only edit own?

FYI, when you assign a role directly to a specific post (or by default for new posts), "Post Author" is not offered because it is redundant under the default role definitions.

I see…
But now that I've set a general role of 'editor' for my custom post, is there any need for the 'editor' on 'default for new' ?
The "DEFAULTS for new" post role assignment bestows the Editor role to selected users and groups for each new post after it is created.
BEFORE setting the general role as advised by you, and BEFORE updating to the latest dev version I actually had the following happen to me:
I set my user to WP-Contributor - and now he could actually create, but neither edit nor publish.
I haven't tested this with the dev-version, coz I'm pulling an all-nighter and have to present tomorrow so time is sparse

No, a General Role of Editor will cover all the custom posts except any for which you have restricted the Editor role.
