1. I have it set to hide a specific category from all authors except Admin. Which is what I need.

2. It seems I have it checked so users have multiple RS Roles, but then when that is checked it seems like every time a new author signs up I have to "assign" them abilities, which I dont have time to do.

3. When I uncheck that and allow them normal WP access, features etc. then they can see that category. Seems like a catch 22.

This is what I want:

I only want the category hidden from all authors but admin. I want authors to sign up and be able to post on their own, I dont want to assign them roles, I dont want to moderate their posts.

Any ideas?

I assume you have WordPress set to make Author the default role for new users. If not, that's your first step to achieve automation (Settings > General > New User Default Role).

I can't tell from this description what RS roles you are assigning to those users. But if you still need to do so, assign to the group [WP Author]. That means all users (present and future) with a WordPress role of Author.
