I want to use this plugin for a demo site by editing a role and making the demo user have some of the full functions but can't edit the settings, edit the plugins, themes and User management including Role manager. How would i go about doing this.

You can prevent non-Administrators from setting RS roles / restrictions by modifying this option:

Roles > Options > Features tab > Role Assignment

Everything else you mentioned is controlled by capabilities which can be removed from the user's role using a simple role editor plugin such as Capability Manager.
